3 egg whites
Pinch of salt
3 tablespoons water
1 cup caster (superfine) sugar
3 tablespoons cornflour (cornstarch)
1 teaspoon vanilla essence (extract)
1 teaspoon white vinegar
2 cups cream, beaten and sweetened
3 ZESPRI® SunGold Kiwifruit, peeled and sliced
- Preheat the oven to 190°C (375°F).
- In a large stainless steel bowl, add the egg whites, salt and water. Whip until stiff. Slowly add the sugar while whipping, then sift in the cornflour, add the vanilla and vinegar.
- On a non-stick baking sheet or waxed paper, shape the mixture into an 18 cm (9 in) round and 5 cm (2 in) high disk. Place in the oven and turn off. Leave for 6 – 8 hours.
- Remove from the oven. Decorate with cream and ZESPRI® SunGold Kiwifruit slices.
